Location
In the heart of Old Town Fort Collins.
The Welsh Rabbit is a space where craft, patience, and hospitality quietly converge. A family-owned cheese shop with deep roots and a discerning eye, it balances old-world tradition with thoughtful modern taste.
Shelves of local and imported cheeses sit beside carefully chosen provisions, while custom charcuterie boards are prepared by skilled mongers who understand that great things are built through attention, timing, and care. It’s an intimate, sensory space—warm, grounded, and human—an ideal setting to slow down, gather, and explore ideas with intention.
